Couscous salad with zucchini and microgreens pea
How it works:
1.Pour boiling stock over the couscous in a bowl. Mix in 1 tbsp freshly squeezed lemon juice together with 1 tbsp oil, cumin, salt and pepper and leave to soak for approx. 5 minutes.
2.Wash and finely dice the zucchini, mix with 1 tbsp lemon juice and 1 tbsp oil and season to taste.
3.Clean and chop the tomato, drizzle with the remaining oil, season with salt and pepper.
4.Then arrange the couscous and vegetables on a plate. Top with Micro Greens pea and natural yogurt.
What you need for 2 people:
- 80g couscous
- 150 ml vegetable stock
- 1 lemon
- 3 tbsp olive oil
- a pinch of ground cumin
- salt & pepper
- 200 g zucchini
- 1 tomato
- 4 tbsp natural yoghurt
- 1 cup Herbeus Micro Greens pea
