Poached egg “Oriental” with microgreens radish daikon
Here’s how to do it:
- Peel and finely dice the onion and garlic. Wash, halve and finely chop the chili pepper and bell pepper.
Sauté everything together in hot oil for 1 to 2 minutes. - Pour in the tomato juice and season with spices. Simmer gently for 15 minutes and taste again.
- Then crack the eggs and slowly slide them into the sauce. Crumble the cream cheese on top, add the capers, cover and poach over a low heat for 5 minutes.
- Garnish with microgreens radish daikon.
What you need for 2 people:
- 1⁄2 white onion
- 1 garlic clove
- 1⁄2 red chili pepper
- 2 red pointed peppers
- 1 tin of chopped tomatoes
- 1 tbsp olive oil
- a pinch of ground cumin
- salt & pepper
- 1 squeeze of lemon juice
- 2 eggs
- 2 tbsp cream cheese, crumbly
- 1 tbsp capers, drained
- 1 cup Herbeus Micro Greens radish daikon
