What are microgreens? They are vegetables and herbs that are harvested shortly after the first leaves have developed. At this size, they not only taste particularly intense, but also impress with their shape, color and variety of vitamins and minerals. Tiny with lots of power, a superfood.
Today we are introducing you to the lemon balm cress, also known as lemon balm micro greens, from our range. HERBEUS lemon balm cress grows all year round in our vertical indoor farm in Marchfeld. Like all Herbeus varieties, it is 100% free from chemical pesticides and has a particularly intense flavor.
Micro greens lemon balm are used to decorate ice cream variations and desserts. This also explains why they are known as dessert cress and sweet cress. But the lemon balm minis can do much more. They go particularly well with veal saltimbocca and add a minty flavor to cured ham. Or try a pesto, lemon balm jelly or a syrup. You can jazz up your summer salad or even rice dishes. These mini herbs are simply versatile.
They smell of lemon and taste of mint. They contain vitamin C and the essential oils exude a fragrance for relaxing moments.
Herbeu’s tip on how else you can use our micro greens and mini herbs: Spice up your cocktails or make ice cubes with lemon balm for mocktails or iced tea, they are not only pretty but also refreshing. For your herbal tea or iced tea, pour hot water over a few leaves, leave to infuse briefly and you’re done.
