Poached egg “Oriental” with microgreens radish daikon

Here’s how to do it:

  1. Peel and finely dice the onion and garlic. Wash, halve and finely chop the chili pepper and bell pepper.
    Sauté everything together in hot oil for 1 to 2 minutes.
  2. Pour in the tomato juice and season with spices. Simmer gently for 15 minutes and taste again.
  3. Then crack the eggs and slowly slide them into the sauce. Crumble the cream cheese on top, add the capers, cover and poach over a low heat for 5 minutes.
  4. Garnish with microgreens radish daikon.

 

What you need for 2 people:

  • 1⁄2 white onion
  • 1 garlic clove
  • 1⁄2 red chili pepper
  • 2 red pointed peppers
  • 1 tin of chopped tomatoes
  • 1 tbsp olive oil
  • a pinch of ground cumin
  • salt & pepper
  • 1 squeeze of lemon juice
  • 2 eggs
  • 2 tbsp cream cheese, crumbly
  • 1 tbsp capers, drained
  • 1 cup Herbeus Micro Greens radish daikon
